Caleb and I just slide a fresh batch of banana date bars out of the oven. I wanted to share the recipe because they are simple to make and oh so tasty! The base mixture can have all kinds of goodies added to it, such as dried fruit or cocoa. Experiment and have fun!
3 ripe bananas, smashed
1 cup medjool dates, chopped
1/2 cup chopped pecans
2 tbs coconut oil
1 tsp vanilla (optional)
2 cups rolled oats (could be replaced with almond flour)
Smash the bananas in a bowl. Throw in the dates, pecans, and oil, and stir. Add in the vanilla and rolled oats and stir to combine. Let the mixture stand for 5 minutes so the oats can absorb some liquid (skip if using almond flour). Dump into a small pan that has been greased with coconut oil, and then press everything down.
Bake for 25 minutes at 350 degrees.
