Dinner in a Snap

Simple is the theme this week. All I will say, “mmm-mm GOOD!”

Paleo Apple Pork Chops

  • Free-range, grass fed pork chops, bone-in
  • Pepper
  • 1 apple, sliced 1/4 rings
  • Pepper to taste
  • Dash cinnamon

Take the chops from the fridge and set them on the counter for 10-15 minutes. While the chops come up to room temp, light the grill. When the grill is warm, season the chops with a pepper and place them on the grill. Grill for about 5 minutes and then flip. After the chops are flipped, place the apple rings in a single layer around the edge of the grill, and then lightly dust cinnamon on the apples and chops.

Cook the chops for 5 minutes or until done. Before removing them, place an apple ring on top of each one. Remove the chops and stack them on a plate with an apple between each one. Cover the plate with a foil and let set to rest for 3 or 4 minutes. Done.

For a light dinner, I suggest a simple arugula salad: toss arugula with whisked olive oil and lemon, tomato, red onion, and diced sun-dried tomato.
