Almond Butter Bombs

After years on the bike, I’ve grown tired of the processed food that’s available for cyclist. I can only eat so many Clif Bars, Powerbars, or Larabars in a season. Considering it’s only March and I’m ready for something new, I thought I’d try to create handy foods that provide sufficient energy while being mostly paleo. These little treats blow away any granola bar and rank right up there with the Powerbar ProteinPlus Bites. The only differences: these are all natural, cheap, and simple to make. Mix up a batch and hit the road!

1/2 cup almond butter (creamy or chunky)
1/3 cup agave
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 toasted unsweetened coconut, divided
1/4 chopped mixed nuts
1/4 raw oats

Assembly is simple: mix the butter, agave and spices together. Then stir in 3/4 of the coconut and all of the chopped nuts. Scope out the mixture by the teaspoon and roll into a small ball less than 1 inch in diameter. Refrigerate for 1 hour.

Remove the bombs from the fridge and roll in a mix of the remaining coconut and raw oats. Ready!

This is a really flexible base recipe. Play around with it by adding different fillers or coatings. I plan to experiment with coconut oil, raisins, and adding proteins.
